Just use 10W40. Pick your choice as far as brand, everyone has their fav.

hmm a 1000 miles on the first oil change. 10w40 is good for summer temps around here. 5w is better for winter. Depending on your temps of course. Personnally, I would flush the system with new oil for 200 miles, then put in synthetic. Clutch particals/debris is why I would flush the system. Of course your manual will list the tempreture/weight oil to use.

10W40 and I'd use valvoline motorcycle oil until you switch to synthetic. The Valvoline in a detergent oil and will clean the motor too.

This is not the first oil change, I let the dealer do the initial first service at 500 miles.

Kawasaki says to let the engine go till 7500 for the next oil change. I'm not ((I'll change at 3000), but at only 1000 miles, I don't think that the engine is broken-in enough for synthetic. I intend to run dino-oil for a full year. To ensure a good break-in, and it will mean longer engine life.

I change my oil every 2000 miles it can't hurt. Plus it depends on hard you ride.
