Yea, those wires look like one of your problems, hehe!
Anyway, you have 6 yellow wires and 6 possible ways to wire them. I would put numbers on all of them first thing. Maybe you could put quick connectors on them.
You will need to push them back in the reveal to keep them out of the way of the flywheel & magnets.

I have never messed with an alternater, but I would imagine one of those wires is a common. It will have equal ohms when read with the other two. The other two would have twice the ohms. But this is a total guess. Do you have a motor winding service somewhere near you, they could probably help you out.
First try I would wire that common one to the center wire from the regulator, the other ones may not matter.

With that being said, I can solder any of the 3 yellow wires entering the stator cover to the alternator 3 yellow wires and I will be fine?

Again, I am not an expert on alternators, but if they are all the same & none are common, I would think it doesn't matter. All the sorting out must be done with the diodes in the rectifier.
