JT, you get written instructions and a complete video laying out all the elements of how to do the job. They come with the kit. Paul Thede, RT's main guy, is the one who actually goes through the job step by step on the video. Frankly, I think the hardest part of the whole process is the disassembly and reassembly of the fork instead of the actual installation of the Gold Valve and shims on the OEM damper rod. You need a holding tool for the damper rod, and you can make this 4-pronged device from a piece of pipe or even an aluminum bicycle seatpost. None of it is rocket science, but there are quite a few steps. The video was priceless in walking someone through the process.

I do not know why Moto Pro SAE10 recommended oil. Apparently it is very heavy and will slow the rebound.
Either your team Ultramax oil holes are very large. I do not know.
The oil level as well shown here is only for the last part of suspension travel: basically to avoid background. But be careful not to increase more than 15 or 20cc life is in danger because of the checkpoints by reducing the air volume and increase the oil.
JoelThailand, I'm sorry about your mechanic. Sometimes it really is a problem to find a trusted mechanic.
If you decide to do the job yourself, put the right tools. Is paramount.
