Break in service.....
Just wondering if I should take the bike to the dealer and let them do the 500 mile break in service or should I do it myself? Any concerns with the warranty if I do it? And is there anything I can screw up?

do the work yourself. they won't be checking your valves anyway so what's the big deal? change oil/filter and check all your bolts for tightness. make any cable/chain adjustments you think are needed and your done. the oil and filter are the big one. don't be overly concerned about all the torque settings for each bolt. just put a wrench on them all to make sure they're not loose.
PS. make sure you pull off the seat to check you air filter. if i recall correctly they come from the factory dry as a bone and sometimes the dealer forgets to oil it up.

Ditto. Changed my oil and filter around 450 miles, didn't bother checking the valves. We cleaned and oiled the air filter. The filter was oiled but it was some really poor filter oil so we cleaned it all out and reapplied some of the good stuff.
Checked tightness on some bolts, looked at fluids, that's about all we did. Gonna change the oil again at 1500 miles.
