Any difference in performance will, no doubt, be (very?) slight. Just stirring the pot.

My valve adjustments will be probably be done to the tall end of spec since the adjustment procedure is such a delight.

The shims come in size increments of 0.05mm. Increasing the gap beyond an additional 0.05mm step would put them outside of the tolerance range.

LOL!...I'm with you. As a lazy guy who enjoys riding his bike more than wrenching on it, I'll do without the 10-15 horsepower that are bound to be present in manipulating the valve clearance.

The factories design their engines with optimum valve clearance specifications. Those values are in the exact center of the specification.

Shims are only available in certain sizes. In actual application, the perfect "center" specification may not be able to be reached with the available shims. Hence, there is leeway on either side of center to allow for this.

Got the 300 back together last evening.
New wheel bearings all around. New main jet with carb cleaning. New front sprocket. Valves checked, adjusted.
Second kick, fired right up

Bike runs great. Really fun to ride, very powerful, sturdy and pulls like a farm animal.
After maiden ride, I discovered leaking forks

Thanks, Got a lot done this winter. If I can get these forks to stop leaking I'm going to quit wrenching till next Jan.
